- ~ Sauteed breast of chicken with mushrooms, onions, and tomatoes in a brown sauce laced with red wine.
- Santa Fe Chicken
- ~ Chicken breast marinated in a spicy tex-mex sauce and topped with Monterey Jack cheese.
- Crepes Victorian
- ~ Breast of chicken cut in thin strips sauteed in onions, mushrooms, wine, and presented in a Bechamel sauce.
- King Ranch Chicken
- ~ Chicken breasts marinated in a tomato chili, layered with corn tortillas, cheese & cream of mushroom sauce.
- Grilled Lime Chicken
- ~ Grilled chicken breast with a lime honey Creole mustard sauce.
- Chicken Mushroom Tarragon
- ~ Sliced breast of chicken simmered in a rich brown sauce with white wine, mushrooms and tarragon. Served in a delicate puff pastry pillow.
- Chicken Tortilla Casserole
- ~ Grilled chicken and corn tortillas mixed with enchilada sauce, sour cream, green chilies, and topped with lots of cheese and jalapenos.
- Texas Pecan Chicken
- ~ Tender skinless breast encased in our unique Texas pecan breading. We bake this and serve with a delicate lemon-basil cream.
- Chicken & Vegetable Penne
- ~ Grilled chicken breast mixed with bell peppers, onions, celery, tomatoes, and penne pasta.
- Savory Baked Cut Chicken
- ~ Chicken quarters roasted in olive oil and savory herbs.
- Athens Rosemary Chicken
- ~ This tender breast is rubbed with rosemary, garlic and olive oil then oven roasted and served on a roasted tomato and red pepper coulis.
Beef Entrees:
- Roast Rib Eye
- ~ Choice rib slowly oven roasted to perfection, served with Au jus.
- Braised Beef Tips in Wine Sauce
- ~ Beef cut into bite sized pieces and dredged in a red wine sauce.
- Herb Roasted Beef Tenderloin
- ~ Tenderloin with fresh herbs, roasted medium rare and served with a red wine shallot glaze. We recommend our roast garlic mashed potatoes to complement this indulgence.
- Six ounce Grilled Sirloin Steak
- ~ Grilled with a bit of salt & pepper.
- Jack Daniel's Peppered Rib Eye
- ~ Rib Eye brushed with Jack Daniel's Tennessee Whiskey, pressed into cracked black pepper and sautéed. We deglaze our sauté with a touch of the whiskey, add espagnole sauce and spoon over this flavorful steak. No need to worry about intoxication, the alcohol evaporates leaving only the desired flavorings.
- Sliced Roast Round of Beef
- ~ Slow roasted to perfection, can be pre sliced or set up as a carving station.
- Beef Stroganoff
- ~ Tender strips of beef braised in brown sauce with mushrooms, onions, laced with sour cream and served over rice or noodles.
- Beef Roulade
- ~ Sliced prime rib stuffed with wild rice, mushroom duxelle served with roasted garlic demi-glace.
- Beef Wellington
- ~ Preparations vary all around the world. Ours is sliced tenderloin covered with pate and/or mushroom duxelle and completely wrapped in puff pastry. Served with Bordelaise sauce. Prepared individually.
Swiss Steak
~ Tenderized beef steak braised and served in a brown gravy.
Chicken Fried Steak
~ The way you like it, best with our garlic mashed potatoes.
Southern Meat Loaf
~ Ground beef blended with savory herbs, garlic and vegetables, baked and topped with a roasted tomato sauce.
Stuffed Bell Peppers
~ Fresh bell peppers stuffed with a mixture of ground beef, fresh vegetables & spices, and then baked.
Seafood Entrees:
- Seafood Crepes
- ~ Assorted seafood and vegetables tightened in a very nice fume!
- Southwestern Crab Cakes
- ~ Choice crab meat, onions, peppers, cilantro and spices make these delicacies a true crowd pleaser. We serve these with a chili aioli sauce and garnish with lime zest cream.
- Pecan Crusted Halibut
- ~ Fresh filet of Halibut coated in a mixture of pecans, bread crumbs & herbs, and baked.
- Basil Garlic Shrimp
- ~ Jumbo shrimp marinated in olive oil, garlic, basil and cracked black pepper. We saute these and serve atop your choice of either spicy marinara or a champagne butter sauce.
- Broiled Salmon with Dill
- ~ Fresh salmon cooked with a dill sauce
- Snapper Belle Vista
- ~ Fillet of snapper dusted in seasoned flour, browned, and covered with lemon, white wine, tomatoes, onions, bell peppers and baked to perfection.
- California Grilled Snapper
- ~ Grilled filet of snapper topped with sauteed crab, Pico de gallo and a light butter sauce.
- Bacon Wrapped Shrimp with Jalapenos
- ~ Jumbo shrimp wrapped with a jalapeno in a strip of bacon, garnished with a Spanish salsa.
- Broiled Tilapia with Lemon Butter
- ~ Tilapia pan broiled and topped with a lemon butter sauce.
